Southern Ulster “Stoutridge Malt House” Single Malt Whiskey

 

Mash Bill: 100% Barley Malt

Barrels: ex Pinot Noir French Oak + ex Laphroaig scotch barrels.

Age: 15 Months

 

We built our own malt house in order to fully realize the quality we wanted to achieve in our Single Malt Whiskey. Double oaked to perfect the flavor landscape in this beautiful spirit. Cheers!

Southern Ulster “Angus’ Kiln” Blended Whiskey

 

Mash Bill: 44% Barley Malt, 22% Empire Rye Straight Rye, 17% Wagner’s Bourbon, 17% GNS

Barrels: Hudson Valley grown oak + 700 Gallon 10 vintage red wine foudre.

Age: 24 Months

 

Blends are the high art of making whiskey and are not easy to perfect. We are very proud of this one and feel it represents everything we are trying to achieve in all of our whiskeys.

 

Awards: Bronze, 2020 ADI competition.

Wagner’s “Northern Threat” Corn Whiskey

 

Mash Bill: 90% Corn, 10% Barley Malt

Barrels: 2nd use rye whiskey 

Age: 15 months

 

Distillery owner Kim Wagner loves traditional American corn whiskeys. This one is subtly oaked with locally grown oak barrels and double ‘direct-fired pot’ distilled. Smoooooth!

 

Awards: Silver, 2019 Hudson Valley Spirit Competition

Rye 75 Rye Whiskey

 

Mash Bill:  75% Rye, 10% Malted Barley, 15% Corn

Barrels:  Hudson Valley grown wood, 36-month air-dried, 3 Char

Age: 15 months

 

This is our grain forward style of Rye emphasizing the extraordinary flavor from the West Wind Farm near Saratoga NA. A shorter aging time allows the grain flavor to dominate the spirit.

 

Awards: This whiskey won “Best Overall Spirit” at the Hudson Valley Spirit competition in 2019.

WW Light Whiskey

 

Mash Bill: 50% Rye, 50% Corn

Barrels: 2nd use rye barrels + Cognac Foudre Solera

Age: 24 Months

 

Light Whiskey is whiskey distilled to a higher proof on the still and aged in used barrels. It has less of the heavy flavors normally associated with American whiskey. The Scots call it Grain Whiskey and use it in their blends.

Awards: Bronze, 2019 ADI competition.

Empire Rye

Straight Rye Whiskey

 

Mash Bill:  75% Rye, 10% Malted Barley, 15% Corn

Barrels:  Hudson Valley grown wood, 36-month air-dried, 3 Char

Age: 30 months

 

This is our traditional style of Rye emphasizing the unique local flavor from the Quercus Cooperage Hudson Valley grown oak barrels. Wonderful notes of cinnamon spice!

 

Awards: Silver, 2020 ADI Competition

Gin 2 - Italian Style Gin

 

Six Squared grain vodka-based.

 

Fennel Seed, Almond themed gin.

Gin 0 - British Style Gin

 

Six Squared grain vodka-based.

 

Juniper, Coriander, Lemon peel themed gin.

Gen Z Genever

 

Mash Bill:  50% Rye, 50% Corn

Barrels: 2nd use Pinot Noir French Oak

Age: 12 months

 

If Genever gin was made in a Nordic country. Grain flavors mixing with subtle Aquavit style spices. 

Like drinking fresh caraway bread straight out of the oven.

 

Awards: Double Gold and “Best of Category” at the American Distilling Institute competition in 2019

Gen Rye Genever

 

Mash Bill:  80% Rye, 20% Corn

Barrels: 2nd use Rye whiskey barrels

Age: 12 months

 

A Genever gin to celebrate Empire Rye, a New York-style of whiskey. This is spiced with botanicals that grow easily in the Empire State.

 

Awards: Gold and “Best of Category” at the American Distilling Institute competition in 2020

Gen X Genever

 

Mash Bill:  40% Rye, 60% Corn

Barrels:  none

Age: 6 months

 

Our take on a modern Genever style gin. Soft grain flavors melded harmoniously with gentle spice notes. 

 

Awards: Gold and “Best of Category” at the American Distilling Institute competition in 2018.

West Wind American Genever

 

Mash Bill:  50% Rye, 50% Corn

Barrels: 2nd use Laphroaig scotch 

Age: 12 months

 

The Scots often use American Bourbon barrels to make Scotch and we thought we’d bring some of these barrels back home for another filling. Transforms “Gen X” into this amazing spirit.

 

Awards: Gold at the American Distilling Institute competition in 2020

AZ 190 proof spirit 

 

Grain-based: Rye, corn, barley malt.

 

36 plate distilled. Delicate notes of chocolate, cocoa bean.

Six Squared Vodka - Purple Label

 

Grape based: Concord, Seyval Blanc.

 

36 plate distilled. Fruity, vanilla beans, Very fresh taste.

Wagner’s White Lightning Corn Whiskey

 

Mash Bill: 90% Corn, 10% Barley Malt

Barrels: No

Age: 6 months

 

Distillery owner Kim Wagner loves traditional American corn whiskeys. This one is un-oaked and double ‘direct-fired pot’ distilled for a grain flavor richness not often seen in white whiskey.

West Wind Spirit Whiskey

 

Mash Bill: 50% Rye, 50% Corn

Barrels: 2nd use rye barrels + 1300 gallon Barolo Italian red wine

 

Age: 15 Months

 

Distillery owner Steve Osborn’s pet project. Double barrel-aged blend of Scottish style grain whiskey and Stoutridge Vodka. Sounds odd but with Campari in summer: Simply Amazing!

 

Awards: Bronze, 2019 ADI competition.

West Wind “American Whiskey”

 

Mash Bill: 50% Rye, 50% Corn

Barrels: 2nd use rye barrels + !300 gallon Barolo Italian red wine + #2 char southern oak

 

Age: 15 Months

 

Triple wood American Whiskey! A very complex flavor profile for an American whiskey. A favorite in the distillery tasting room. From locally grown, superior quality West Wind Farm grains.

Ann Kaley’s “Ann’s Cask”

 

70% Six Squared grape vodka / 30% plum eau de vie blend.

 

An inspired flavored vodka, fruity and texturally vibrant, using Hudson Valley grown plums and grapes.

Ann Kaley’s “Kirschka”

 

70% Six Squared grain vodka / 30% cherry eau de vie blend.

 

An exquisitely flavored vodka, cocoa and cherries, using Hudson Valley grown cherries and grains.

Pastis d’Osborn

 

Bittering agents: none

 

Age: 6 months in glass Demijohn

 

Sugar: 12%

 

Classic Pastis made on traditionally configured equipment typical of 19th century France.

Ann Kaley’s “Grand Seville” Orange Liqueur

 

Bittering agents: Bitter Orange Amertume

 

Age: 6 months in glass Demijohn

 

Sugar: 8%

 

A classic French style orange liqueur, with 20% of 3-year-old french oak barreled brandy to add complexity and color. Pure natural flavors. No added botanicals or spices.

Stoutridge Wintergreen Fernet

 

Bittering agents: Rhubarb, Gentian

 

Age: 6 months in glass demijohn

 

Sugar: 12%

 

A fernet to calm and fortify for the coming winter, or whenever you feel a chill coming on. Classic Fernet, strong bracing flavors on a warm background of liqueur.

 

Release Date: October 2020

Stoutridge Amer (Amaro)

 

Bittering agents: Cinchona, Bitter Orange

 

Age: 1 year in bottle.

 

Sugar: 8%

 

A French-style, less sweet and more pungent, lends itself perfectly to modern cocktails where things often get out of balance toward the syrupy.
