Stoutridge red wines have a very long aging potential and as such can benefit from decanting upon opening. Pour the wine carefully into a decanter leaving the last ounce in the bottle with any heavy sediment (a bottle holds 25 ounces). Wait 1-2 hours and serve.
2008 Vintage
2008 was a near ideal long growing season that allowed for full flavor development in the berries. Many of the wines have a broader flavor profile because of this. The reds benefitted from cool weather during the fermentation which led to full flavor extraction and smoothness from tannin polymerization.

2007 Vintage
The 2007 vintage was one of the warmest on record in the Hudson Valley. A once in 25 years vintage. The resulting wines are full and soft and flavorful. All the wines were made using the gravity techniques and biological side winemaking. The wines are unprocessed and unchemically altered.
